Ingredients:
1 Tablespoon coconut oil
1 cup carrots, chopped
1 teaspoon minced garlic
1/2 teaspoon thyme
2 bay leafs
2 cups cooked chicken, chopped
6 cups chicken broth
sea salt and black pepper to taste
about half of a sweet potato, peeled and spiralized into noodles
Directions:
- In a large stockpot, melt the coconut oil over medium heat and sauté the carrots and garlic, until tender (about 5 min).
- 2. Add the chicken broth, bay leaves, thyme, and bring to a boil. Reduce the heat and allow to simmer for 10-15 min.
- Stir in sweet potato noodles and allow to cook for another couple minutes.
- Turn off heat, remove bay leaves, and season with salt and pepper.
- Serve hot and enjoy!
